oink oink

pork is a protein i don't mess with often and i couldn't really tell you why. i decided it's time i got to know it a little better. i picked up some pork chops from trader joe's and decided to grill last night! i made a marinade i saw on tv one day which intrigued me--apricot jam with soy sauce, spicy mustard and i threw in a little powdered ginger for good measure.

instead of marinating the the pork, i threw it on the grill after brushing a little olive oil on and then kind of glazing it before flipping it. i was paranoid because i don't really know how long to cook it for so i just did it by touch, haha! as long as it felt tough enough i assumed it was good--and luckily i was right! i could've taken the pork off maybe a minute earlier but it was still quite juicy since i let it rest for a few minutes.

i'm going to need to continue experimentimg...
